Alpha Acids: 3 – 5%

Perhaps the most famous of the four noble hops, Hallertau Mittelfruh is a superb addition to Pilsners, Kölsches, altbiers, wheat ales, and Continental lagers. While it can be used throughout the boil, its elegant aromas of flowers and spice work best as late additions. Higher dosage rates bring out mild stone fruit and tropical fruit flavors, but most brewers prefer a lighter touch when using Hallertau Mittelfruh.

Flavor & Aroma: Dried Flowers, Hay, Sweet Spice, Earth, Citrus Blossom

Developed in Southern Germany as a potential substitute for Hallertau Mittelfruh, German Hersbrucker is a workhorse aroma hop often found in traditional Continental-style lagers and some Belgians. It sports a mild yet balanced aroma of floral, fruit, and spice. Compared to Mittelfruh, Hersbrucker has a slightly more pungent fruit character.

Alpha Acids: 2 – 4.5%

Originally released in 2002 by the Hop Research Center in Hüll, Saphir is an excellent aroma hop originally bred as a possible Mittelfruh substitute. Saphir combines the earthy, spicy, floral flavors expected in a noble hop with its own unique and complex fruit profile: a sweet citrus aroma with notes of tangerine and red berries. Its low alpha acids (among the lowest in the world) combined with its extraordinarily low cohumulone levels help Saphir excel as an aroma addition for German lagers, Pilsners, and Belgian-style ales. It is a top choice for a dry hop addition in Pilsners.

Flavor & Aroma: Flowers, Spice, Tangerine, Red Berries, Herbs

Alpha Acids: 3 – 6.5%

Released in 1993, Spalter Select (sometimes referred to as Select) was bred to be a disease resistant, higher yielding version of Spalt, one of the four noble hops. Spalter Select is the daughter of both Spalt and Mittelfruh. It displays similar characteristics to its noble heritage and is regarded as a slightly spicier version of Spalt. Much like the noble hops, Spalter Select is spicy, flowery, and herbal, but Spalter Select also has undertones of ripe berries and citrus. Use this hop as a late boil addition in traditional lagers, cold fermented ales, Belgian ales, and weissbiers.

Flavor & Aroma: Flowers, Spice, Herbs, Ripe Berry, Lemon, Wood

Alpha Acids: 11 – 16%

This high alpha variety was bred in 1980 at the Hüll Hop Research Center in Germany and is known for its extremely large and heavy cones. Magnum is best utilized as an early boil addition, as its smooth, efficient bittering is ideal for a wide variety of beer styles. Though not known as an aroma variety, Magnum can produce subtle spicy, floral, and resinous flavors with a touch of citrus when added late in the boil.

A daughter of Cascade, Hallertau Blanc, and Hüll Melon, Mandarina Bavaria is another high impact hop from the Hüll Hop Research Center. With its citrus character supported with mild pear and melon notes, Mandarina Bavaria works well as a mid- or late-boil addition to IPAs and pale ales. On its own, this unique hop adds an entirely new, vibrant dimension to lighter styles such as a saison, pale lager, or Kölsch.
